Swordfish with Peach Sauce

Yield: 4 servings
Prep Time: 30 minutes

  • 1 pound swordfish steaks, 1 inch thick
  • ½ cup no-fat sour cream


  • ½ cup Clearbrook Farms Apricot or Peach Preserves or Spreadable Fruits
  •  1 tablespoon Dijon mustard
  • ½ cup dry white wine
  • 2 tablespoons onion, minced
  • 2 teaspoons dried dill weed
  • ¼ teaspoon salt
  • ⅛ teaspoon hot pepper sauce


  1. Combine ingredients for sauce and microwave for 1 – 2 minutes on high or until mixture comes to a boil
  2. Place fish in a baking dish that has been sprayed with vegetable oil spray.  Pour the sauce over the fish and bake in a 350 degree oven for 15 to 20 minutes or until fish flakes easily with a fork.
  3. Remove fish from pan and place on a warm platter.  In a small saucepan, over medium heat, combine sour cream with sauce from baking pan and bring mixture to a boil.  Cook for 1 minute.  
  4. Pour sauce over fish and serve.
